2 hrsThis is retro entertaining food at its finest. Layers of crab meat, packaged stuffing, and split chicken breasts get stacked in a buttered casserole dish, blanketed with undiluted cream of mushroom soup, and baked low and slow until the chicken is fall-apart tender.
The crab on the bottom might seem unexpected, but it works as a rich, briny foundation. The stuffing layer above it absorbs drippings from the chicken and moisture from the soup as everything bakes together, turning into a savory, almost dressing-like center.
Baking uncovered at a lower temperature for 90 minutes is what makes this casserole special. The slow bake lets the mushroom soup reduce and concentrate into a thick, golden sauce while the chicken stays moist underneath it.
Pro Tips
- Use lump crab meat and pick through it carefully for shell fragments. Nothing ruins a bite of casserole like crunching down on shell.
- Skin the chicken breasts before layering. The skin won’t crisp under the soup layer and turns rubbery instead.
- Don’t dilute the mushroom soup. It thins out as the chicken releases moisture during baking. Diluting it beforehand leaves you with a watery casserole.
- Let the casserole rest 10 minutes after baking so the layers set and it slices more cleanly.
Variations
- Swap crab for cooked shrimp for a different seafood base.
- Use cream of chicken soup instead of mushroom for a milder flavor.
- Add a layer of Swiss cheese slices between the stuffing and chicken for extra richness.
