Papaya and Vegetable Salsa

Ingredients

1large papaya seeded, finely chopped
1cup tomatoes seeded, finely chopped
1/2cup cucumbers seeded, finely chopped
1/4cup scallions, spring or green onions finely chopped
3tablespoons lime juice
1tablespoon cilantro fresh
1tablespoon jalapeno pepper seeded, finely chopped
1x flour tortillas low-fat, chips

Directions

Combine first 7 ingredients in medium bowl.

Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.)

Let stand at room temperature 30 minutes before serving.

Serve with tortilla chips.
