As my granddaughter responded mmmm yummy delicioso. I substituted 3/4 c of all purpose flour for whole wheat flour. I will make this recipe more often.

Ingredients

1 1/4 cups flour, all-purpose
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
2 tablespoons vegetable oil
1 cup blueberries fresh or frozen, optional

Directions

In a bowl, combine flour, sugar, baking powder, baking soda and salt.

Combine buttermilk, oil and egg; stir into dry ingredients and mix well.

Fold in blueberries if desired.

Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.

Cook until second side is golden brown.
