Ingredients

1/4 cup carrots julienned
1/4 cup zucchini julienned
1/4 cup mushrooms sliced
1/4 cup onion julienned
1/4 cup sweet bell pepper julienned
1 x salt
1 x black pepper
1 x seasoning mix
4 teaspoons prepared mustard
2 each pita pockets
4 slices tomato

Directions

Preheat oven to 375 degrees F.

Saute vegetables in water or steam until tender.

Drain and season to taste.

Spread thin layer of mustard on top of whole, unsplit pita.

Top with vegetables and tomato slices.

Toast lightly.

Black Bean Chili

Very hearty and flavorful. The goat cheese complements the chili nicely. I took the advice of the previous reviewer and let it simmer for a couple hours after I mixed everything together. Also, I accidentally bought 2 cans of diced tomatoes instead of crushed, but it was still good, and the red chunks made it pretty :-)
