Sometimes dinner just needs to be fast, cheap, and filling. This ground turkey one-pot meal delivers all three. Brown the turkey, dump everything else into a Dutch oven, heat through, and eat. Five minutes of prep, 15 minutes of cooking, dinner for four.

The combination of stewed tomatoes and condensed tomato soup creates a thick, tomatoey sauce that coats the potatoes, green beans, and turkey without needing anything else. The stewed tomatoes bring chunks of soft, seasoned tomato while the soup adds body and clings to every ingredient.

Onion and green bell pepper go in raw with the other vegetables. They soften in the hot sauce as everything heats through, adding a fresh crunch that keeps the texture from being uniformly soft.

Pro Tips

  • Break the turkey into small pieces while browning. Large clumps don’t distribute well through the vegetables. Use a wooden spoon to crumble it as it cooks.
  • Use canned diced potatoes for the fastest version. Fresh potatoes need to be parboiled first or they’ll be crunchy.
  • Let it simmer a few extra minutes if you want the flavors to meld more. Twenty minutes is the bare minimum. Thirty is better.

Directions

Brown turkey in skillet.

Pour browned turkey into dutch oven pot.

Add chopped onion and chopped green pepper.

Mix in green beans, diced potatoes, stewed tomatoes, can of tomato soup.

Heat until warm through.
