Submitted by Icklegemz
Omie’s apple torte loaded with chopped apples and nuts in a buttery cinnamon batter. A dense, rustic German-style apple cake that’s more fruit than cake in every bite.

1 hrs“Omie” is grandmother in German, and this torte has that handed-down quality where the fruit does all the talking. Three whole apples and a cup and a half of chopped nuts folded into a relatively small amount of batter means every slice is packed with chunky fruit and crunch, held together by just enough cinnamon-spiced cake.
The batter itself is simple: creamed butter and sugar, eggs beaten in one at a time, generous vanilla, and a flour mixture with baking soda and cinnamon. It’s thick and stiff, which is exactly right. A loose batter wouldn’t support the weight of all that apple and nut.
Spreading this dense dough into a 13×9 pan and baking for 50 minutes produces a torte that’s moist from the apple juices and sturdy enough to slice into clean squares. It sits somewhere between a cake and a fruit bar. Served warm with vanilla ice cream or whipped cream, it’s the kind of dessert that ends a fall dinner on exactly the right note.
Kitchen Tips
- Use a firm baking apple like Granny Smith, Honeycrisp, or Braeburn. Soft varieties like McIntosh turn to mush during the long bake
- Chop the apples into small, uniform pieces so they distribute evenly through the thick batter
- The batter is very stiff. Fold in the apples and nuts by hand with a sturdy spatula rather than using the mixer
- Test doneness with a toothpick in the center. Apple juice can make it look underdone even when the cake is fully baked
Variations
- Use pecans or walnuts for the nuts, or a mix of both for varied flavor
- Add ½ cup of raisins or dried cranberries with the apples for extra sweetness
- Drizzle with a simple caramel sauce instead of serving with ice cream
