“Omie” is grandmother in German, and this torte has that handed-down quality where the fruit does all the talking. Three whole apples and a cup and a half of chopped nuts folded into a relatively small amount of batter means every slice is packed with chunky fruit and crunch, held together by just enough cinnamon-spiced cake.

The batter itself is simple: creamed butter and sugar, eggs beaten in one at a time, generous vanilla, and a flour mixture with baking soda and cinnamon. It’s thick and stiff, which is exactly right. A loose batter wouldn’t support the weight of all that apple and nut.

Spreading this dense dough into a 13×9 pan and baking for 50 minutes produces a torte that’s moist from the apple juices and sturdy enough to slice into clean squares. Directions

Cream sugar and butter.

Add eggs, one at a time. Mix in the vanilla and beat well.

Mix flour, cinnamon, and soda and add to above mixture.

Add chopped nuts and apples.

Spread in a 13×9 cake pan. Bake at 350℉ (180℃). for about 50 minutes.

Serve with vanilla ice cream or whipped cream.
