These oatmeal chews are the kind of bar cookie that breaks every rule of “real” baking, no oven, no creaming, no resting, and somehow tastes great anyway. The whole thing comes together in the microwave in under 10 minutes of active work, then chills for an hour to set.

The oat-and-sugar-and-syrup base behaves like a granola bar layer when microwaved properly. The corn syrup is what holds everything together as it cools, creating the signature chewy-but-not-sticky texture that gives these their name.

Dark corn syrup over light is the right call here. The molasses depth contributes a caramel undertone that pairs beautifully with the chocolate chip layer. Light syrup makes the bars taste flat and one-dimensional.

Microwaving the base at HIGH until bubbly is the move that activates the syrup and toasts the oats slightly. Pull it too early and the bars stay crumbly and won’t hold together. Push through to the bubbly stage for proper structure.

Melting the chocolate chips on MEDIUM power (not HIGH) is critical. Chocolate scorches in seconds at high power in a microwave. Medium gives you control to melt without burning, and the slower melt produces a smoother, more spreadable chocolate layer.

Pro Tips

  • Use quick-cooking oats, not steel-cut or old-fashioned, the smaller flakes bind together better in the brief microwave cook
  • Press the base mixture firmly into the pan with a spatula or the bottom of a measuring cup for compact, sliceable bars
  • Let the chocolate cool slightly before sprinkling on the nuts, hot chocolate would shift the nuts and lose the even pattern
  • Chill the full hour before cutting, the chocolate needs time to fully set or it’ll smear when you slice

Variations

  • Stir in dried cranberries, raisins, or coconut flakes into the oat base for added texture and flavor
  • Use white chocolate or butterscotch chips instead of chocolate for variations
  • Add a tablespoon of peanut butter to the melting chocolate for a peanut butter-chocolate version

Directions

Melt butter in large glas bowl in microvawe on HIGH for 45 sec.

Stir in oats, sugar, syrup and salt.

Press evenly into bottom of 8 x 8 x 2 inch baking pan.

Microwave on HIGH for 3 to 4 minutes, untill bubbly.

Spread the surface even and sprinkle the chips over all.

Microwave on MEDIUM for 4 to 6 minutes, until chips are melted.

Spread out evenly and sprinkle the nuts all over top.

Chill for 1 hour and cut into bars.
