Bread machine oatmeal bread is the gateway loaf for anyone with a bread machine collecting dust on the counter. Rolled oats added to a basic yeast dough do double work: they soften during the rise into a tender, slightly chewy crumb, and they add the kind of wholesome flavor that store-bought white bread can never match.

The applesauce twist is what sets this version apart. Most oatmeal breads use honey or molasses for sweetness, but a tablespoon of applesauce contributes a gentle fruit sweetness while also adding moisture and a subtle binding effect from the natural pectin.

It’s a smart, lower-sugar move that doesn’t compromise the bread’s character.

The ingredient order matters more than home bakers often realize. Pour the wet ingredients into the bread machine pan first, then add the dry ingredients on top, and put the yeast last in a small well at the center.

This order keeps the yeast dry until the machine starts mixing, which prevents premature activation that can ruin the rise. Most bread machines need about 3 hours from start to finish for a basic white or wheat cycle.

Pro Tips

  • Use rolled (old-fashioned) oats, not steel-cut or quick-cooking. Steel-cut won’t soften enough; quick-cooking turns to mush.
  • Use bread flour, not all-purpose. The higher protein content gives the loaf the structure to support the heavy oats.
  • Check the dough ball about 10 minutes into mixing. It should be smooth and slightly tacky; add a tablespoon of water or flour as needed.
  • Cool completely on a wire rack before slicing. Cutting hot bread compresses the crumb and turns it gummy.

Variations

  • Substitute multigrain hot cereal for the rolled oats for extra texture and flavor variety.
  • Add a quarter cup of chopped walnuts and a half cup of plumped raisins at the fruit-and-nut beep.
  • Swap the applesauce for an equal amount of honey or maple syrup for a sweeter, more traditional oatmeal bread.
