Rolled oats added to a basic yeast dough do double work: they soften during the rise into a tender, slightly chewy crumb, and they add the kind of wholesome flavor that store-bought white bread can never match.
The applesauce twist is what sets this version apart. Most oatmeal breads use honey or molasses for sweetness, but a tablespoon of applesauce contributes a gentle fruit sweetness while also adding moisture and a subtle binding effect from the natural pectin.
It’s a smart, lower-sugar move that doesn’t compromise the bread’s character.
The ingredient order matters more than home bakers often realize. Pour the wet ingredients into the bread machine pan first, then add the dry ingredients on top, and put the yeast last in a small well at the center.
