Oat bran, whole wheat flour, bread flour, rolled oats, and wheat germ all go into the dough alongside sliced bananas, honey, and applesauce. It’s a dense, hearty bread with natural sweetness from three different sources.
The bananas and applesauce pull double duty. They add moisture and natural sugar that feeds the yeast, while also replacing the oil or butter you’d typically find in a bread recipe. Egg whites keep it lighter than a whole egg would, and honey rounds out the sweetness without making the bread taste like dessert.
Gluten flour is essential here. With this much bran and whole wheat competing against the bread flour, the dough needs the extra protein boost to develop enough structure for a proper rise. Without it, you’d end up with a dense, flat brick.
Kitchen Tips
- Use ripe bananas with brown spots. They’re sweeter, softer, and mash into the dough more easily.
