A post-Thanksgiving dinner fix that rescues leftover roast turkey from dry sandwich territory and turns it into a juicy, bacon-studded burger. Chopped cooked turkey, crumbled crisp bacon, cracker crumbs, beaten eggs, and Worcestershire sauce get mixed into patties and pan-fried like regular hamburgers.

The eggs and cracker crumbs are structural, not decorative. Cooked turkey doesn’t have the raw-meat stickiness that holds a ground-beef patty together, so the eggs bind and the crumbs absorb moisture, giving the patties enough cohesion to survive the flip. Don’t skimp on either; skipping leads to patties that fall apart in the pan.

Cover the skillet while the patties cook. Trapping steam helps them heat through without requiring extra oil or a long, drying sear. Three to four minutes a side gets you golden-brown exteriors and warm, juicy centers. American cheese slice goes on during the last minute so it melts without getting stringy. Directions

MIX turkey, bacon, crumbs, eggs, Worcestershire sauce and pepper in medium bowl.

Shape into 4 patties.

HEAT lightly oiled skillet on medium heat 1 minute.

Add patties to skillet; cover.

Cook 3 to 4 minutes on each side or until golden brown.

Top each patty with process cheese food slice during last minute of cooking time.

TOP each patty with 1 pickle; serve on hamburger bun with condiments.
