|1/2||pound||mozzarella cheese||fresh or buffalo if possible|
|4||each||tomatoes||fresh ripe beefsteak or heirloom|
|1/4||cup||vinegar||red wine or balsamic|
|1/2||cups||olive oil, extra-virgin||good quality (more or less to taste)|
Slice cheese to about the same thickness you will slice the tomatoes.
On large platter, arrange alternate slices of cheese and tomatoes.
Sprinkle with basil.
Combine vinegar, salt, pepper and olive oil in a small bowl or measuring cup.
Drizzle over tomatoes and cheese.
Let marinate at room temperature for up to 1 hour before serving.
