2each beets steamed until a fork easily goes in it, about an hour, peeled, sliced into strips*
4cups mixed greens fresh - rinsed, patted dry with a paper towel*
1x goat (chevre) cheese as needed*
1x walnuts chopped, as needed, optional*
For the dressing:
1tablespoon olive oilVideo
1tablespoon lemon juice
1tablespoon balsamic vinegar
1x salt and black pepper as needed*

Mixed green leaves, a few beet juliennes, some crumbled goat cheese, garnish with chopped walnuts.

Use a vinaigrette salad dressing.

We love beets and goat cheese, they were perfect combination together. And this simple dressing was so tasty, giving lots of flavor into the salad. We have been making this salad for several times, and alway love it!
