1 hrsThis is the answer for cake cravings on a low-cleanup day. Everything mixes directly in the baking pan, which means you dirty exactly one dish: a fork. No mixer, no bowls, no creaming butter.
The crumb is tender thanks to a classic depression-era trick. Vegetable oil instead of butter, and a hit of lemon juice reacting with baking soda to leaven the cake. No eggs, no dairy. Just pantry staples that come together in 10 minutes.
The poppy seeds and fresh lemon zest carry all the flavor. Toast the poppy seeds for a minute in a dry pan first if you want a deeper, nuttier note.
A simple powdered sugar dusting is the right finish. The cake is humble, and a heavy frosting would mask the citrus brightness that makes it special.
Pro Tips
- Stir the dry ingredients with a fork right in the pan first to break up baking soda lumps. They leave nasty bitter pockets if missed.
- Mix just until the flour disappears. Overworking makes the cake tough and rubbery.
- The cake is done when the top springs back lightly and a pick comes out clean. Don’t rely on color alone since these stay fairly pale.
- Cool completely before dusting with powdered sugar or it will melt into a sticky glaze instead of staying snowy on top.
Variations
- Drizzle with a quick lemon glaze made from powdered sugar plus more lemon juice for extra punch.
- Swap lemon for orange zest and juice for a sweeter, mellower citrus version.
- Add ½ teaspoon almond extract along with the lemon for a bakery-style depth.
