Minestrone bake takes the rustic bones of Italian minestrone soup and reimagines it as a bubbling, cheesy casserole. Instead of ladling broth into bowls, you layer cooked elbow macaroni with sweet bell peppers, juicy tomatoes, and pork and beans, then blanket the whole thing in sharp cheddar and salty parmesan.
This is a pantry-raid dinner dressed up for company. No browning, no simmering, no fussy roux. Just mix, spoon, top with cheese, and bake until the edges go golden and the center bubbles lazily around the pasta.
The pork and beans do quiet heavy work here, bringing a sweet-smoky backbone that echoes the traditional cannellini and tomato base of real minestrone. Diced red and green bell peppers add crunch and color so every forkful looks as good as it tastes.
Kitchen Tips
- Undercook the macaroni by about two minutes before assembling; it finishes cooking in the oven and won’t turn mushy.
- Drain the tomatoes well if using canned, or the casserole will release too much liquid as it bakes.
- For a browned, crusty top, slide the dish under the broiler for the last two minutes, watching carefully so the cheese doesn’t scorch.
Variations
- Swap pork and beans for kidney or cannellini beans and add a pinch of Italian seasoning for a more traditional minestrone flavor.
- Stir in a cup of baby spinach or chopped kale for extra greens.
- Top with panko mixed with olive oil for a crunchy, crouton-like finish.
