| 1/4 | package | spaghetti | |
| 1 | tablespoon | olive oil | |
| 1 | large | onion | chopped |
| 2 | Cloves | garlic | chopped |
| 2 | Stalks | celery | chopped |
| 1 | medium | potato | chopped |
| 4 | cups | water | |
| 14 1/2 | ounces | tomatoes | diced, with green chilies |
| 15 | ounces | kidney beans | or any canned beans |
| 1 | each | sweet red bell pepper | |
| 1/4 | cup | cilantro | chopped, (optional) |
| 3 | tablespoons | organic shoyu |
Cook spaghetti as package directs, set aside.
Heat oil, sauté onions and garlic until onions are translucent.
Add potato, celery and water, simmer until vegetables are tender.
Add tomatoes, beans and red peppers, simmer 2 minutes.
Add cilantro and shoyu.

This recipe is delicious and easy to make -- great for company too. The only drawback is that the puff pasty contains lots of trans fat :(
