Ingredients

1/2 cup yogurt, plain
2-3 teaspoons cilantro snipped (or parsley)
Pinch of curry powder
1/2 cup cashew nuts dry roasted
1/2 cup cucumber chopped
1/2 cup sweet bell peppers green or red
1/4 cup red onion chopped
2 x pita bread rounds split crosswise

Directions

In a medium mixing bowl stir together yogurt, cilantro or parsley, and curry powder.

Stir in cashews, cucumber, sweet pepper and red onion.

Spoon evenly into split pita rounds.
