A party-ready layered Mexican dip that’s been a potluck staple in American kitchens for decades. The assembly is the whole recipe: jalapeño bean dip on the bottom, mashed avocado with taco sauce in the middle, seasoned sour cream above that, and shredded cheddar across the top.

Each layer does a specific job. The spicy refried bean base provides earthy, rustic depth. The guacamole-taco-sauce middle adds creamy richness and bright tomato tang. The sour cream-taco-seasoning layer brings cool dairy balance with Tex-Mex spice. The grated cheddar finishes with salt and visual impact.

Layer order matters. Dense layers (like bean dip) go on bottom; lighter layers go up. If you reverse it, the heavier layers push down and mix everything together before guests can see the stratification that makes this dip fun. Use a glass serving dish so the layers are visible from the side.

This dip improves with a couple of hours in the fridge. The flavors meld and the layers firm up enough to scoop cleanly with a tortilla chip without everything falling apart in one dive. Serve with a bowl of sturdy corn tortilla chips alongside.

  • Use ripe avocados. Squeeze a bit of lime juice into the mashed avocado to keep it from browning while you build the other layers.
