60 minThis banana bread takes an unexpected route. Instead of chopped nuts, Grape-Nuts cereal provides that crunchy, nutty texture throughout the loaf. The small, dense nuggets hold their crunch during baking far better than most nuts do, giving you a satisfying bite in every slice.
The recipe skips butter and oil entirely, relying on mashed bananas, egg substitute, and corn syrup for moisture. Buttermilk adds tang and tenderness while reacting with the baking soda for a good rise. The result is a lighter loaf than traditional banana bread, but still moist and full of flavor.
