Sliced tomatoes, seeded cucumber, black olives, scallions, celery, fresh mint, and parsley get tossed in a lemon and olive oil dressing. That’s it. Fifteen minutes, no cooking.

Directions
Place tomatoes in a large serving dish.
Peel the cucumber.
Halve lengthwise, seed and slice thinly.
Add to the tomatoes.
Add the remaining salad ingredients, toss and set aside.
