| 10 | ounces | pizza crust | |
| 1 | tablespoon | olive oil | |
| 1 | bunch | spinach | fresh |
| 1 | small | leek | chopped |
| 1 | cup | mushrooms | sliced |
| 1/4 | cup | black olives | sliced |
| 2 | cloves | garlic | minced |
| 6 | ounces | feta cheese | |
| 1 | large | tomato | large, sliced |
| 1 | x | black pepper | freshly ground |
Saute the spinach, mushrooms, onions, garlic, and leek in 1/2 the olive oil.
Brush the remaining half on the pizza crust and top with spinach mixture and black olives.
Crumble feta over spinach, then top with slices of fresh tomato and black pepper.
Bake at 350 degrees F for 20 minutes or until done.
My family really enjoys Mediterranean food and we absolutely loved this. Even the kids! Definitely a regular for our family!

Fantastic quick and delicious recipe. Had it cold with vege and meat dish last night then added mushrooms and ate it hot for lunch today. Very versatile and so easy! Make this one.
