20 minIn Hawaii, SPAM is not a punchline. It’s a pantry staple with genuine cultural roots, and this open-faced baked muffin puts it front and center the way it deserves.
Toasted English muffins get a swipe of butter and mustard, then overlapping slices of SPAM, a pineapple ring, and a green pepper ring. The brown sugar glaze goes on last and caramelizes slightly in the oven.
Ten minutes at heat and they come out hot, sweet, salty, and a little sticky at the edges. Weeknight supper, weekend brunch, tailgate food. Twenty minutes total.
Kitchen Tips
- The mustard under the SPAM adds a sharp counterpoint to the sweet glaze. Don’t skip it.
- Use the brown sugar glaze generously. It’s a small amount but it pulls the whole thing together as it heats.
- Canned pineapple slices work perfectly here. Drain them well so the muffins don’t get soggy.
