Mashed Banana Fritters

Mildly sweet snack at tea time, it goes great with coffee, tea or a cold glass of milk. Best made with ripe or overripe bananas.

473 ml bananas

45 ml rice flour

15 ml butter

Directions

Lightly mix flour with mashed banana. (Add 1 tablespoon of white or unbleached flour if mixture is too liquid. You may add 1 teaspoon of brown sugar if you have a sweet tooth.) Lightly butter a frying pan on medium heat. Drop spoonfuls of the banana batter onto the pan. Fry for about 3 minutes on each side until golden brown. Serve warm.

I really have no idea about if these banana fritters can be frozen well or not. I left a post in "request a recipe" section. Hope we will find some answers there.
