| 2 | ounces | bean thread noodles | |
| 2 | cups | cucumbers | peeled, sliced |
| 2 | cups | sweet bell pepper | chunked |
| 1 | cup | salad dressing, italian | |
| 1 | tablespoon | basil | minced |
Drop the noodles into boiling water until done (length of time depends on type; read the label).
Drain. Toss all ingredients together and marinate for at least 1 hour.
Serve on a bed of lettuce.

This was a great recipe. It tasted fabulous. A little runny though. Rec substituting dry curd cottage cheese instead of ricotta.
