Three cups of plain yogurt blend with a full cup of mango pulp, milk, water, and sugar into a creamy, bright-orange drink that drinks like a milkshake but feels much lighter on the stomach.
The secret to a great lassi is the mango. Alphonso mango pulp (sold in cans at Indian grocery stores) is the gold standard, with a rich custard-like texture and a perfumed sweetness that fresh North American mangoes rarely match. Fresh ripe mangoes work fine, but pick fragrant, soft-skinned varieties (Champagne or Ataulfo) for the closest flavor.
The garnish elevates the drink from refreshing to special. Ground pistachios sprinkled on top add a faint nutty depth and that classic Indian dessert appeal. Pour over crushed ice for the ideal texture: cold and slushy at the rim, smooth in the middle.
