Ingredients

2 large eggs beaten
3/4 cup sugar granulated
1 tablespoon butter melted
2 1/2 cups flour, all-purpose
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg ground
1 cup dates chopped
1 cup milk
1 teaspoon lemon extract
1 x vegetable oil or shortening, as needed, to deep-fry

Directions

In a bowl, combine beaten eggs, sugar and melted butter; beat well.

In another bowl, combine flour with baking powder, salt and nutmeg.

Fold in dates.

Add dry ingredients to egg mixture alternately with milk and lemon extract.

Heat oil in deep-fat fryer to 375 degrees F.

Drop batter by tablespoonfuls, 2 or 3 at a time, into hot oil and fry until crisp and brown, about 3 minutes frying time, turning once.

Drain on paper towels.

I think Id lost my mind if I didnt have this recipe! hehe! This is the most outstanding mocha coffee mix that I have ever had! Im in Arizona and you can use it after you make it in cup of hot water and use it for ICE COFFEE in Summertime!!! excellent stuff!
