This is the fruit salad that wins over kids and disappears first at potlucks, and it could not be easier. There’s no cooking and no whipping cream to fuss with: the creamy dressing comes together right in the bowl from just milk and a packet of instant vanilla pudding mix sprinkled over the fruit.

The trick is to sprinkle the dry pudding mix in while stirring, rather than mixing it separately. The fruit’s own juices and the milk activate the pudding, which thickens around everything into a light, glossy, just-sweet coating in about five minutes, no separate dressing needed.

Pineapple chunks, seedless grapes, and banana make a classic, crowd-pleasing combo: sweet, juicy, and a little tart. Drain the canned pineapple well first so the dressing sets up creamy rather than runny, and stir the bananas in gently so they don’t bruise. Vanilla pudding keeps it mellow, or use lemon for a brighter, tangier version. Let it stand a few minutes to thicken, then serve cold. It’s a low-fat, no-bake treat that comes together in the time it takes to peel a couple of bananas.

Kitchen Tips

  • Sprinkle the dry pudding mix over the fruit while stirring, so it thickens evenly without clumping.
  • Drain the pineapple well first, or the extra juice will make the dressing runny.
  • Add the bananas last and stir gently so they don’t bruise or brown.
  • Serve cold and within a few hours, before the bananas darken.

Variations

  • Use lemon pudding for a tangier salad, or chocolate for a dessert twist.
  • Add mandarin oranges, mini marshmallows, or shredded coconut.
  • Fold in a little whipped topping for an even creamier, fluffier salad.
