Directions

  1. Preheat oven to 325°F (160°C) and line baking sheets with parchment paper or silicone mats (highly recommended – prevents over-browning).
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl (stand mixer or hand mixer), cream the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2–3 minutes. Scrape down the bowl as needed.
  4. Add the eggs one at a time, beating well after each addition until fully incorporated.
  5. Gradually add the flour mixture in 2–3 additions on low speed, mixing just until combined. The dough should be soft but not sticky. If it’s too sticky to handle (especially in humid weather), add an extra 1–2 tablespoons of flour.
  6. Fold in the chopped white chocolate and macadamia nuts by hand with a sturdy spatula until evenly distributed.
  7. Scoop heaping tablespoons (or use a #40 cookie scoop, ~1.5–2 tbsp) and place 2 inches apart on prepared baking sheets. Gently flatten each ball slightly with your fingers or the bottom of a glass – this helps them spread evenly.
  8. Bake one sheet at a time in the center rack for 13–16 minutes, until the edges are lightly golden and centers still look slightly underdone (they’ll firm up while cooling). Rotate the sheet halfway through for even baking.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
