A light but tasty side dish that is perfect for a backyard barbecue on a hot summer day.

Ingredients

4each potatoes
1 1/2cup milkVideo skim, or soy milk
2tablespoons flour, all-purpose
1/2teaspoon salt
1/4teaspoon garlic powder *
1/4teaspoon cayenne pepperVideo *
1/2cup onion chopped
1/2cup cheddar cheese low fat, shredded, optional

Directions

Peel and slice potatoes thinly.

In a saucepan, combine milk, flour, salt, garlic powder and cayenne pepper and cook over medium heat until sauce thickens.

Add onions to sauce.

Layer casserole dish with potato slices.

Spoon half of sauce over slices and repeat with remaining potatoes and sauce.

Cover and bake in oven preheated at 350 degrees for 60 min.

Optional: Remove from oven and sprinkle with low-fat cheddar cheese.

If you are a scalloped potato fan this one is worth a try. I used only half of the recommended cayenne to give it a hint of heat and was a little more generous with the cheese. Try Provolone for a smokey flavor or Swiss cheese for a tasty change.

I would add 1 half cup of fresh Celery leaves to the onions in this recipe.
