Directions
In a bowl combine apple juice and gelatin.
Let stand in a container of hot water until dissolved.
Stir in lemon juice, rind, and pineapple juice, and chill until partially set.
Meanwhile, pour the evaporated skim milk into a bowl, and place in freezer until crystals form.
Once the gelatin mixture is set, beat the evaporated milk until thick and fluffy.
Beat the gelatin mixture until light and frothy.
Combine the two mixture together, and pour into a mold.
Chill until set.

I think the 416 calorie content per serving is overstated, and perhaps is the amount for the entire recipe instead of per serving. I did a quick calculation of the ingredients and added up less than 400 overall. I haven't made it yet, but this looks like a very good 100 calorie per serving recipe.
Susan, thanks for your comment. I just checked the nutrition fact, and realized the calculation of evaporated skim was based on evaporated whole milk, that's why the number here is higher than the recipe should be.
