Louisiana Stuffed Oranges

Ingredients

6 medium sweet potatoes, or yams
4 large navel orange
1/2 stick butter melted
1/4 teaspoon nutmeg
1/2 cup brown sugar
1/2 cup pecans
1/4 teaspoon cinnamon
1 ounce liqueur grand marnier or cointreau, orange flavor

Directions

Bake yams at 350 degrees F. until tender.

Cut oranges in half.

Scoop out pulp and chop up half of it.

Peel yams, put into mixing bowl with chopped orange pulp, melted butter, sugar, nutmeg, cinnamon, half of pecans and Grand Marnier.

Mix well and stuff oranges. Sprinkle rest of pecans on top.

Bake at 350 degrees F. for 20 minutes.

Lacy Oatmeal Cookies

This is a great recipe and it's is so simple. I changed it up a bit. I substituted almonds and left some of them fairly chunky. I also added dried diced apricots to the dry ingredients along with about 1/2 cup sesame seeds. After cooling I added some melted dark chocolate and dropped a bit on top of each cookie. I then added a sliver of dry apricot to rest on top of the chocolate. They looked smashing and they had an excellent flavor.
