Crockpot London broil roast braised low and slow in a rich brown gravy with onion, garlic, wine and bay leaves. A dump-and-go slow cooker beef dinner that turns a lean cut fork-tender.

Lean cuts like London broil can turn out tough and dry, but the slow cooker rewrites the rules. Hours of low, moist heat in a savory gravy break down the tough fibers and leave the beef fork-tender and shreddy.

This one is about as hands-off as dinner gets. The roast goes in, onion, garlic, beef bouillon and a splash of wine join it, and brown gravy poured over the top handles the seasoning and the sauce in one move.

A practical note straight from the recipe: stretch the gravy with an extra cup of water, because the bouillon and gravy mix together can run very salty. That small adjustment keeps the dish savory rather than harsh.

Two bay leaves laid on top perfume the whole pot as it cooks. Set it on low or high and walk away; by dinner you’ve got tender sliced beef and gravy ready to ladle over mashed potatoes or egg noodles.

Pro Tips

  • Add the extra cup of water to the gravy; the bouillon plus gravy mix is salty on its own.
  • For deeper flavor, sear the roast in a hot pan before it goes into the crock.
  • Fish out the bay leaves before serving.
  • Slice the beef against the grain so it stays tender on the plate.

Variations

  • Add carrots, mushrooms or quartered potatoes to braise alongside.
  • Use a dry red wine for a deeper, richer gravy.
  • Stir in a spoonful of Worcestershire or Dijon for extra savor.
