| 2 | lbs | spinach | fresh, well washed, stems removed and , chopped, or two 10oz packages frozen chopped spinach, , thawed |
| 6 | tablespoons | onion | dehydrated or chopped |
| 3 | tablespoons | flour, all-purpose | |
| 1 | tablespoon | milk, skim, (non fat) powder | instant |
| 1/2 | teaspoon | onion powder | |
| 1/2 | teaspoon | sugar | |
| 1/4 | teaspoon | tumeric powder | |
| 1/2 | teaspoon | salt | |
| 2/3 | cups | scallions, spring or green onions | chopped |
| 8 | ounces | water chestnuts | drained, chopped |
| 1 1/2 | cups | sour cream | light |
| 1 | cup | mayonnaise, light | reduced-calorie |
If using fresh spinach, steam it over rapidly boiling water 1 to 2 minutes, until tender, then drain well.
If using frozen, simply squeeze out the excess moisture but do not cook.
In a small bowl, combine the dehydrated onion, flour, dry milk, onion powder, sugar, turmeric, and salt.
In a medium-size bowl, combine the remaining ingredients with the drained spinach.
Add the dry ingredients to the spinach mixture and mix well.
Chill for several hours.
Serve in a hollowed-out bread round, if desired.
Makes about 6 cups.

You're making pastry cream for a banana cream pie for dessert tomorrow. Chilling it overnight should render it appetizingly ...
This is a superb recipe. I didn't use any vinegar (didn't have any in my cupboard), and added grater ginger, brocolli, red pepper, and thickley sliced mushrooms, and WOW! Looked great and was delicious. Definately a favourite.
