Easy lemonade pie is the kind of dessert that lives at the back of every cookout cookbook because it takes about three minutes to put together. Frozen lemonade concentrate folds straight into thawed whipped topping along with a hit of lemon zest for extra citrus oil. That’s the whole formula.

The filling sets in the refrigerator over 12 hours as the lemonade slowly thickens the whipped topping. The recipe runs honest about the result: sometimes it sets firm and sometimes it stays soft, depending on how cold the topping was, how concentrated the lemonade is, and the chill time.

Serve straight from the pan as squares or pile into a graham cracker crust for proper pie wedges. Either way, it’s a make-ahead win when summer heat rules out turning on the oven.

Kitchen Tips

  • Partially thaw the whipped topping just enough to fold cleanly, not warm. Fully thawed topping deflates faster and gives a thinner pie.
  • Keep the lemonade concentrate frozen until the moment you fold it in. Pre-thawed concentrate dilutes the topping and makes setting harder.
  • If the pie won’t firm up after the long chill, hit it with 30 minutes in the freezer before serving. The texture stays scoopable but holds shape on a fork.
  • Use pink lemonade concentrate for a pretty rose-pink color without food coloring.
  • Hold for serving up to 24 hours covered tightly. Beyond that the topping starts to weep and slump.

Directions

Fold altogether and put in baking dish to cut into squares after it set up, or in a graham cracker pie crust.

Place in refrigerator for at least 12 hours.

If it doesn’t set up well, freeze for about ½ hour.

I’ve had it set up beautifully at times, and at other times really be too runny to be pretty! A sprig of mint on top makes it especially good to look at.
