LBJ was so passionate about this Texas-style chili (no beans, no fillers, just meat and chiles) that the White House reportedly mailed copies of the recipe to anyone who wrote in asking for it. Made traditionally with venison from the LBJ ranch but you can substitute beef without losing the essential character.
The simplicity is the appeal. Just meat, onion, garlic, tomatoes, and a bold spice mix of chili powder, cumin seeds, and oregano. No beans, no fancy chocolate, no beer or coffee tricks; this is what Texas chili looked like before food bloggers started complicating it.
The one-hour simmer is the bare minimum to break down the meat and meld the spices. If you’ve got more time, two hours improves it noticeably. Skim the fat as it cooks; venison is lean enough that this isn’t critical, but with beef substitution it matters more.

Place meat, onion and garlic in a large heavy skillet or Dutch oven.
Cook until light colored. Add oregano, cumin, water, chili powder, tomatoes, hot pepper sauce (more or less to taste), and salt. Bring to a boil, lowering heat, and simmer for one hour. Skim off fat during cooking.
