Ingredients

1/2 pound spinach bag or bunch, fresh, washed
1 large orange peeled
1/4 cup almonds slivered, toasted
1/4 cup olive oil extra virgin
1 package sugar substitute
2 tablespoons vinegar
2 tablespoons orange juice
2 tablespoons parsley leaves fresh, chopped, optional
1 x salt dash
1 x black pepper to taste

Directions

Wash spinach and tear into mid-size pieces. Spin dry in salad spinner and set aside.

Toast almonds under broiler until lightly browned. Peel orange and chop into bite size pieces. Combine dressing ingredients and shake well.

Add almonds, oranges, and dressing to spinach and toss well.
