These lasagna rolls are a clever way to get all the flavors of a full lasagna in a fraction of the time. Cooked noodles get spread with a filling of Italian sausage, cottage cheese, egg, and Parmesan, rolled up jelly-roll style, and microwaved under pizza sauce and melted mozzarella.

The whole recipe is built for the microwave from start to finish. The sausage cooks in the microwave, the assembled rolls heat through in the microwave, and the cheese melts on top in about 30 seconds. Total time from start to plate: about 30 minutes.

Cottage cheese stands in for ricotta here and actually works great in a rolled format. It’s easier to spread on the noodles than ricotta, and the egg binds everything so the filling stays put when you slice into the rolls.

Kitchen Tips

  • Drain the cooked sausage well. Excess fat makes the filling greasy and can cause the rolls to slide apart.
  • Spread the filling evenly all the way to the edges of each noodle so every bite has filling.
  • Place the rolls seam side down in the dish. This keeps them from unraveling during cooking.
  • Use dry red wine instead of water when thinning the pizza sauce for a richer, more complex flavor.

Variations

  • Use marinara or traditional tomato sauce instead of pizza sauce.
  • Add a layer of fresh spinach leaves over the filling before rolling for extra color and nutrition.
  • Swap Italian sausage for ground turkey seasoned with Italian herbs for a lighter version.

Directions

Crumble the Italian Sausage into a 1-quart casserole.

Stir in the onion.

Micro-cook, uncovered, on 100% power for 3 to 4 minutes or until sausage is done and onion is tender.

Drain off fat.

Stir in beaten egg, cream-style cottage cheese, and grated Parmesan cheese.

Spread each lasagna noodle with some of the meat-cheese mixture.

Roll up each noodle jelly-roll style, starting with the short edge.

Place seam side down in a small greased baking dish .

Stir together the pizza sauce and water or dry red wine.

Pour atop lasagna rolls in the baking dish.

Micro-cook, covered, on 100% power for 4 to 5 minutes or until the lasagna rolls are heated through.

Sprinkle shredded mozzarella cheese atop the lasagna rolls.

Micro-cook, uncovered, on 100% power for 30 seconds to 1 minute more or until cheese is just melted.
