| 24 | each | sea scallops | |
| 1 | x | onions | green, small bundle |
| 1 | x | pineapple, canned | chunks, drained, save liquid for marinade |
| 1 | x | skewers | bamboo, soaked in water, or metal |
| 1 | x | lemon | minced zest, and its juice |
| 1 | x | pineapple | juice, saved from above |
| 2 | tablespoons | black pepper | freshly cracked |
| 1/4 | cup | vegetable oil | olive, extra virgin |
| 1 | tablespoon | garlic | minced |
| 1 | teaspoon | salt |
Skewer kabobs scallops, pineapple then the onion three times per skewer. Repeat until product is gone. Grill on medium heat until scallops are done to desired doneness and pineapple is defrosted.
Lemon Pepper Marinade: Mix all ingredients of marinade and marinate scallops for 1 hour before cooking. Then assemble kabobs as above.
