Ingredients

1 cup biscuit baking mix (bisquick)
1 cup cornmeal (yellow)
3 tablespoons honey
3 tablespoons baking soda
3/4 teaspoon salt
1/4 cup mozzarella cheese grated
1/4 cup colby cheese grated
1/4 cup parmesan, parmigiano-reggiano cheese, grated
1 can green chili peppers with liquid
2 large eggs
1 x milk
3 tablespoons vanilla extract

Directions

In order, dump all ingredients into a large mixing bowl.

Add just enough milk (while stirring with a fork) to produce a cake-like-batter consistency.

Continue mixing with a fork until well blended.

Pour into a well greased cookie sheet (about 14 1/2 x 10 x 1/2 inch).

Bake in a preheated 375-400 degree F oven until done.

Approximately 20 minutes.

Serve it hot with chunks of real butter on top.

Cable Car Tuna Casserole

I first encountered this recipe over 10 years ago while visiting a friend. It was my first tuna casserole and I fell in love. I copied from his cookbook and promptly lost it a few months later. I have been searching for this recipe ever since! It is sooooo creamy and delicious. The sharp cheddar cheese gives it a nice bite. I don't care for almonds on/in my food so I skip that but everything else is the same. This will make the most anti-tuna casserole person fall in love with the dish! YUMMMMMMMMMY!
