| Crust | |||
| 2 | cups | vanilla wafer crumbs | or oreo |
| 1 1/2 | cups | coconut | |
| 6 | tablespoons | butter | melted |
| Filling | |||
| 2 | pounds | cream cheese | unwrapped and microwave for 2 minutes on high |
| 5 | large | eggs | jumbo, unshelled and microwaved for 25 |
| 1 | cup | sugar | |
| 1/2 | cup | heavy whipping cream | |
| 1/4 | cup | cornstarch | |
| 1 | teaspoon | coconut extract | |
| 1/2 | cup | coconut | |
| 1 | cup | almonds | coarsly |
Beat cheese until light and fluffy.
Add sugar and beat again.
Add eggs one at a time; beating after each. Add cream, cornstarch and extract.
Mix well. Stir in nuts.
Pour into pan.
Bake at 425 for 15 minutes with a pan of water on the bottom rack of oven.
Reduce temperature to 300 and bake 1 hour longer.
Run knife around edge of cake.
Cool. Top with melted chocolate and whole almonds.
The recipe has been corrected to use only 6 tablespoons of butter.

ok, I haven't made this one, but I have seen similar ones. I think the big problem with this recipe is that it calls for 6 cups of butter for the crust. I am sure they mean 6 TB. 6 cups is a lot of butter! I think I'll stick with one of the other recipes that I saw!

I have loved this recipe for years. The cookies are moist and yuummmmmmmy.
