| 3 | medium | onions | finely chopped |
| 2 | medium | green bell peppers | finely chopped |
| 3 | Stalks | celery | finely chopped |
| 8 | pounds | beef | coarsely ground |
| 6 | ounces | tomato paste | |
| 2 | cans | tomatoes, stewed, canned | |
| 2 | cans | tomato sauce | |
| 1 | can | salsa | chile (7 oz) |
| 3 | Cloves | garlic | finely chopped |
| 3 | ounces | chili powder | |
| 1 | medium | jalapeno pepper | seeded |
| 2 | tablespoons | salt | |
| 1 | x | oregano | |
| 1 | x | garlic salt | |
| 1 | x | black pepper | coarsely ground |
Thinly cover bottom of heavy 2 gallon pot with oil.
Saute onions, green peppers and celery 10 minutes.
Add meat and cook 10 minutes or until brown.
Stir in tomato paste, stewed tomatoes and tomato sauce.
Add chopped garlic, chili powder, salt, dash oregano, chile salsa and jalapeno.
Cook 30 minutes, season to taste with garlic salt and pepper, then simmer 2 1/2 hours.
Stir every 10-15 min. Serves 16.
