| 2 | teaspoons | olive oil | divided |
| 1 | pound | turkey sausage | italian |
| 1 | each | egg | beaten |
| 1 | each | lemon zest | grated |
| 6 | tablespoons | bread crumbs | italian style |
| 2 | cups | tomato sauce | |
| 3 | each | basil | chopped |
| 1 | pinch | oregano | fresh, minced |
| 4 | slices | mozzarella cheese | part-skim |
Spray large non-stick skillet with cooking spray and add 1 teaspoon of the olive oil.
Combine turkey sausage with egg and lemon peel; mix lightly.
Sprinkle bread crumbs on shallow plate.
Shape 1/4 of meat mixture into flat patty and press into crumbs, lightly coating both sides.
Make 3 more coated patties with remaining meat and crumbs.
Brown patties in skillet over moderate heat, for about 2 to 3 minutes.
Add remaining teaspoon of oil and turn to brown other side evenly.
Mix tomato sauce with herbs.
Top each with sauce and a slice of mozzarella.

The brownies turned out phenomenal, however, the recipe ingredients need to be reviewed. I spent an entire afternoon looking for cocoa BUTTER. I had never used it before or seen it anywhere. After spending a good amount of money on a 100% pure cocoa butter body product that was food grade, I figured out from the "directions" that the recipe intended for cocoa POWDER. It may have been my mistake for not reading the directions first as well, but that is a big mistake in the ingredients. Other than that it was great.
