25 minWhen you need a crowd-pleasing side dish but the stove is already maxed out, this microwave Italian potato salad comes to the rescue.
Tender red potatoes cook in just 10 minutes in the microwave, then get tossed with crisp red onions, briny olives, green peppers, and fresh tomatoes.
A good Italian dressing does the heavy lifting here, coating everything in tangy, herb-spiked flavor.
Finish with a sprinkle of fresh parsley and Parmesan cheese, and you’ve got a vibrant salad that beats the deli counter any day.
Pro Tips
- Slice potatoes evenly: Quarter-inch slices cook through at the same rate, so you won’t end up with mushy pieces and crunchy centers.
- Stir once while microwaving: This helps the potatoes cook evenly without overcooking the edges.
- Cool before dressing: Hot potatoes absorb too much dressing and get mushy. Let them cool to room temperature for the best texture.
- Use quality Italian dressing: This recipe lives or dies by your dressing. Pick one with good olive oil and real herbs, not a watery generic brand.
Variations
- Add protein: Toss in chickpeas, white beans, or diced salami for a heartier salad that works as a light lunch.
- Swap the cheese: Crumbled feta or fresh mozzarella pearls add a creamy contrast to the tangy dressing.
- Make it creamy: Stir in a few tablespoons of mayo or sour cream with the Italian dressing for a creamier, richer salad.
