| 2 | tablespoons | olive oil | |
| 3 | each | bay leaves | |
| 2 | pounds | stewing beef | cut into 2 inch cubes |
| 1 | each | yellow onion | cut into 1/4 inch slices |
| 2 | each | garlic cloves | chopped |
| 1 | teaspoon | thyme | dried |
| 1 | teaspoon | rosemary leaves | dried |
| 3 | tablespoons | flour, all-purpose | |
| 1/4 | cup | beef stock | prefer veal stock if possible |
| 1/2 | cup | guinness | |
| 1 | tablespoon | parsley leaves | chopped |
| 1/2 | pound | carrots | sliced |
| 2 | pounds | potatoes | cut into chunks |
Heat a 6 quart stove-top casserole and add the oil and bay leaves.
Cook the bay leaves for a moment and then add the meat.
Brown the meat on both sides on high heat, add the sliced onion and cook until the onions are translucent.
Reduce heat to low and add the garlic thyme, rosemary and flour; stir until smooth.
Add the beef stock and stout.
Simmer, stirring until the stew thickens a bit. Add the remaining ingredients and cover.
Place the pot in a 275 degrees F. oven for about 2 hours, stirring a couple of times.
Add salt and pepper to taste.

General:Caraway Seed is actually the fruit of a biennial herb in the parsley family, known as Carum carvi. The seed is about 1/5-inch long and tapered at the ends. The hard seed shells have five pale ridges....
Love it! For an occasional change try adding 1/2 package of taco seasoning to the chile sauce.
