Inside out ravioli casserole: a baked layer of spinach, macaroni, cheddar, and bread crumbs topped with beef and tomato sauce. All the flavor of ravioli, none of the folding.

2 hrsThis inside out ravioli casserole does exactly what the name promises: takes everything you love about a good spinach-and-cheese ravioli in meat sauce and layers it into a baked dish instead of stuffing pasta pockets one by one. The spinach filling sits on the bottom (mixed with macaroni, cheese, breadcrumbs, and egg) and the meat sauce goes on top, so each spoonful delivers the complete ravioli experience with zero tedium.
The spinach cooking liquid is the unsung secret. Instead of draining it down the sink, the recipe folds a cup of it into the meat sauce, which gives the sauce green, mineral-rich depth you can’t replicate any other way. The bread crumbs in the filling serve as structural glue, holding the spinach-macaroni base together so it slices into neat squares instead of slumping on the plate.
Kitchen Tips
- Squeeze the cooked spinach aggressively in a clean kitchen towel. Wet spinach turns the base soggy and makes the casserole weep.
- Use jarred spaghetti sauce you actually like. The dish takes on its flavor directly, so cheap bland sauce makes cheap bland casserole.
- Let the casserole rest 10 minutes after baking. It sets up and slices much more cleanly.
- Undercook the macaroni by 2 minutes. It continues softening during the 30 minute bake.
Variations
- Swap cheddar for mozzarella and parmesan for a more traditional Italian flavor.
- Use ground turkey, Italian sausage, or plant-based ground beef in place of the beef.
- Add ricotta dollops on top of the pasta layer for extra creamy pockets.

Directions
Cook spinach according to package directions - drain, reserving liquid.
Add water to make 1 cup; set aside.
Heat 1 tablespoon. oil on medium high heat.
Sauté beef, onions and garlic.
When lightly brown, add spinach liquid, spaghetti sauce, tomato sauce, salt and pepper.
Simmer for 10 minutes.
Preheat oven to 350℉ (180℃).
Combine spinach, macaroni, cheese, bread crumbs, eggs, ¼ cup oil.
Pour this mixture into a greased 13×9×2 inch baking dish .
Top with meat sauce.
Bake for 30 minutes.
