Impossible cheddar and broccoli appetizers made with Bisquick, eggs, broccoli, corn, and walnuts. A self-crusting baked appetizer topped with melted cheddar, cut into bite-sized pieces.

40 min“Impossible” recipes earned their name because the Bisquick batter creates its own crust as it bakes. No rolling, no pressing dough into a pan. Just pour the batter over the vegetables, bake, and the Bisquick settles to the bottom and forms a tender base while the filling sets on top.
Broccoli, corn, onion, and chopped walnuts go into the pan first. Then a quick batter of milk, melted butter, eggs, Bisquick, and garlic salt gets blended smooth and poured over everything. The batter finds its way around and between the vegetables, binding them into a sliceable square.
The cheddar goes on at the very end, just 2 to 3 minutes before the bake is done. This gives it enough time to melt into a bubbly golden layer without overcooking or turning greasy. Let the pan cool for a full 30 minutes before cutting. The filling needs time to set or the pieces will fall apart.
Kitchen Tips
- Thaw and drain the frozen broccoli thoroughly. Excess water makes the filling watery and prevents the batter from setting
- Blend the batter until smooth. Lumps of Bisquick won’t dissolve during baking
- Test with a knife in the center. It should come out clean before adding the cheese
- Cut into small triangles or squares for finger-food sized appetizers

*Thaw and drain the broccoli.
Heat oven to 375℉ (190℃).
Grease a 9 x 9 x 2 inch pan.
Mix broccoli, corn, onion and walnuts.
Place in pan. Beat remaining ingredients except cheese until smooth, 15 seconds in blender on high, stopping blender frequently to scrape sides if necessary, or 1 minute with electric mixer on high. Pour evenly into pan. Bake until knife inserted in center comes out clean, 23 to 25 min. sprinkle with cheese. Bake until cheese is melted, 2 to 3 minutes longer. Cool 30 minutes. Cut into triangles or squares. Makes 30 appetizers.
