Just 5 minutes of gentle boiling and you’ve got a creamy, stick-to-your-ribs breakfast that’s infinitely customizable.
The 3-minute rest after cooking (with the lid on) is what transforms this from watery porridge into thick, creamy oatmeal. The oats continue absorbing water off the heat and swell to their full, fluffy potential. Skip this step and you’ll have a thinner, less satisfying bowl.
Starting with cold water makes a difference too. Oats added to cold water heat gradually and release their starch slowly, producing a creamier porridge than oats dumped into boiling water, which tend to cook unevenly with a grainier texture.
Top it however you want: butter and brown sugar for classic, honey for a lighter sweetness, jam for a fruity swirl, or a pour of cream for pure comfort.

Bring to boil over high heat.
Lower the heat and boil gently for 5 minutes.
Remove the pan from the heat and let sit for 3 minutes, covered.
