A chocolate pecan fudge-like frosting makes this Sheet Cake

Ingredients

2 cups sugar
2 cups flour, all-purpose
1 teaspoon baking soda
1 cup butter or margarine (2 sticks)
4 teaspoons cocoa powder generous
1 cup water
1/2 cup buttermilk
2 large eggs beaten
1 pinch salt
1/2 cup butter or margarine
4 teaspoons cocoa powder generous
6 teaspoons buttermilk
1 pound sugar confectioners (powdered sugar)
1 teaspoon vanilla extract
1 cup nuts chopped, or to taste

Directions

Cake:

In a mixing bowl, mix sugar, flour and soda together.

In a saucepan, melt margarine; stir in cocoa and water and bring to a boil. Pour hot mixture over dry ingredients; stir well.

Mix in buttermilk, eggs and salt. Pour into a greased jelly roll pan.

Bake at 400 degrees F. for about 15 minutes, until top springs back when touched.

Frosting:

In same saucepan used for cake, melt butter. Stir in cocoa and buttermilk and bring to a rapid boil. Remove from heat and stir in the sugar and vanilla; blend thoroughly. Stir in nuts.

Spread over cake as soon as it comes out of the oven. Be prepared to clean up some drips.

If there are kids around, let them clean up the drips - this frosting is like fudge! The frosting is so good - it's almost like the cake exists just to give a base to the frosting. Mom cuts the frosting recipe down (about in half) but I like it just the way it is - lots.

I've never made a sheet cake before, and this recipe worked like a charm. I'm not a nut lover, but I put the pecans in the icing anyway because I'm on a diet and I knew I'd be scraping it off the counter myself if I didn't. Okay, okay, I scraped a tiny bit off -- Yummy!!

Sausage-Apple Stuffed Squash

This was VERY good. I used 2 large buttercup squash instead. I also included a crumb topping combining 1/3 c. bread crumbs, 1/4 c. Parmesan and 1/4 c. shredded cheddar cheese. I then melted 3 TBS of butter and drizzled it over all. I would give five stars but end result was a bit dry, next time I make it I will try adding butter and brown sugar under meatballs.
