40 minThis old-school Midwest brownie icing is all about speed and shine. Four ingredients go into a saucepan, hit a rolling boil for exactly one minute, then get poured over warm brownies where the frosting firms up into a glossy, fudgy shell.
The evaporated milk is what makes this work. Its concentrated proteins and sugars create a smoother, more stable emulsion than regular milk would. The result is a frosting that pours like a glaze but sets like fudge.
Timing is everything here. Frost the brownies immediately after pulling them from the oven. The residual heat helps the icing spread thin and even. Wait too long and both the brownies and the icing cool down, making it impossible to get a smooth finish. A wet knife is your best friend for spreading.

- Boil for exactly one minute, no more. Over-boiling makes the sugar crystallize and gives you a grainy texture instead of that signature gloss.
- Use a wet knife or offset spatula dipped in hot water to spread. The icing moves like silk when the blade is warm and damp.

**Can substitute ¼ cup milk with chocolate syrup to taste, but not as good as above.
In saucepan combine butter, sugar and evaporated milk.
Bring to boil.
Boil one minute.
Stir in chocolate morsels and heat and stir until melted.
Frosting will be thin and glossy, but sets up on the brownies.
Frost brownies RIGHT AWAY with wet knife.
(In hot weather, place in refrigerator for about 20 minutes to aid in “setting up")
