A scoop of ice cream on hot oatmeal. It sounds like something a kid would dream up, and it works brilliantly. The ice cream melts into the steaming oats, creating a creamy, sweet sauce without needing to add milk, sugar, or butter separately.

This recipe gives you two methods. Flaky oatmeal starts with boiling salted water, then you stir in the oats and cook briefly. Creamy oatmeal starts with cold water and the oats together, then comes to a boil. The cold-start method lets the starches release more slowly, giving you a smoother, porridge-like texture. Pick whichever you prefer as your ice cream base.

The real fun is in the toppings list. Beyond ice cream, you can pile on brown sugar, preserves, chocolate chips, marshmallows, dates, raisins, honey, maple syrup, sliced bananas, or peach slices. Or cook dried fruit right into the oats for a fruit-blended version.

Pro Tips

  • Use old-fashioned oats for more texture and chew. Quick oats make a smoother bowl but lose that hearty bite
  • Drop the ice cream on right before serving so it’s still partially frozen when it hits the table
  • Cover and let stand after cooking. The oats absorb the last bit of water and fluff up during that rest
  • Vanilla ice cream is the classic choice, but butter pecan or cinnamon are outstanding here

Variations

  • Cook ½ cup of chopped dates, raisins, or dried apricots into the water before adding oats for built-in sweetness
  • Use frozen yogurt instead of ice cream for a tangier, lighter topping
  • Stir a tablespoon of peanut butter into the hot oatmeal before adding the ice cream scoop
