Hot turkey sandwiches on Italian bread with a Monterey Jack cheese sauce, sliced tomatoes, and sauteed onions. Made entirely in the microwave in about 30 minutes.

Open-faced hot turkey sandwiches smothered in a from-scratch Monterey Jack cheese sauce, layered with tomato slices and soft sauteed onions. The whole thing comes together in the microwave, sauce and all.

The cheese sauce starts with a simple roux: margarine, flour, and red pepper flakes whisked with bouillon, water, and skim milk. It thickens in 2-3 minutes, then shredded Monterey Jack gets stirred in until smooth and melty. A pinch of red pepper flakes gives the sauce a subtle warmth you wouldn’t expect.

Each Italian bread slice gets a spoonful of sauce, turkey, tomato, onion, and more sauce on top before a final pass in the microwave to heat everything through.

Kitchen Tips

  • Stir the sauce every minute while it thickens in the microwave. Lumps form fast if left unattended.
  • Use deli-sliced turkey breast for even layering and quick heating.
  • Slice the onions thin so they soften completely during the microwave step.
  • The red pepper flakes are easy to miss in the ingredient list, but they’re what keeps the cheese sauce from being bland.

Directions

Combine Onion and Oleo in 1 Quart Glass Measure.

Cover With Plastic Wrap and Microwave At High 3 To 5 Minutes OR Until Onion Is Tender, Stirring Once.

Remove Onion, Using A Slotted Spoon and Set Aside.

Add Flour and Red Pepper To Oleo; Stir Well.

Gradually Add Bouillon Granules, Water and Milk, Stirring Well.

Microwave Uncovered At High 2½ To 2½ Min. OR Until Mixture Is Thickened, Stirring Every Min. Add Cheese To The Mixture, Stirring Until Cheese Melts and Sauce Is Smooth. Arrange Bread Slices in A Single Layer in A 12 x 8 Baking Dish. Spoon 2 tablespoons Sauce Over Each Slice; Top Each With 2 Turkey slices and 2 Tomato Slices. Top With Onion; Spoon Remaining Sauce Over Tomatoes. Microwave, Uncovered, At High 2½ To 2½ Min. OR Until Thoroughly Heated. Sprinkle With Black Pepper. Serve Warm.
